UTF-8 with BOM so special characters survive the import. Load the product file through Matrixify or Shopify's native importer. Products are set to draft, so nothing goes live until reviewed in the admin.
Import reminders, straight from Shopify's guidance:
Deselect "Publish new products to all sales channels" during import
Use upload and preview, check the preview before completing
After import verify price, weight and inventory first, then enable Point of Sale availability
